Past week we have been gorging on Mediterranean food. Made whole wheat Pita bread using Sanjeevkapoor’s recipe. They turned out quite good with ~ 80% puffing rate! Stuffed it with Falafel from the recipe here and topped it with Nupur’s Tahini sauce. This was just a prelude to the party that we had to host. For the party I made some Pita bread stuffed with smoked vegetables (Lebanese smoked vegetable sandwich) and topped with a yoghurt-mustard dip both recipes from Nita Mehta’s mini cookbook ‘Low cal snacks’. Cauliflower Curry
I am back after a long hiatus (the longest since I started blogging). A short trip to Coorg and then some unavoidable reasons kept me away from the blogoshpere. But now things are under control and I hope I am able to post regularly. Here’s a very simple and quick Cauliflower curry to make a spicy comeback on My Foodcourt! The addition of spices like cinnamon and pepper dominate the strong Cauliflower smell. Monsoon Magic- Butterfly Sandwich
The only butterfly in this sandwich is the shape J A hot grilled sandwich is an all time favourite in our house. I usually dress up some left over stir fries with white sauce- stuff it in between two slices of bread and grill it till crisp and you get Irresistible, yummy crisp sandwiches. The stir fries which get this L look in the morning (usually for lunch) suddenly get this J look with the grilled sandwich. Enjoy this hot grilled Butterfly sandwich with a cup of tea in the wet cozy rainy weather!
Thai style vegetables in Red curry and Saffron Rice
In contrast to week days, Weekends I cook some elaborate meals. This weekend I made this Thai style vegetables in Red curry and Saffron Rice. For the curryI made everything from scratch right from coconut milk. I used the recipe for the Red Curry paste from Sanjeevkapoor. This spicy Thai style vegetables in Red Curry we had with Saffron Rice. I used lime leaves from our garden to flavour the curry . I followed this recipe for Saffron Rice, Except that I made it in the Rice cooker and with our regular long grained white rice-no jasmine rice. __________________________________________________________
